Deep and intense ruby red in color with a complex bouquet that combines the variety’s typical fresh black fruits and spicy notes that blend elegantly with rich oak to heighten the wine’s chocolate and vanilla characteristics. The result is a big and flavorful wine that is concentrated and persistent without sacrificing elegance or depth.

Vinification

The grapes were picked in late April, destemmed, partially crushed, and cold macerated for 7 days prior to fermentation. The must was inoculated with selected yeasts, and fermentation took place at 25º–28ºC (77º–82ºF). Delestages were frequent during the first two-thirds of the process and then short pumpovers at the end of fermentation in order to obtain balanced wines.. The new wine remained on its skins for another 20 days to develop the well-rounded sweetness that characterizes this wine.

The must was inoculated with selected  yeasts,  and  fermentation  took  place  at  25º–28ºC  (77º–82ºF). Pumpovers were frequent during the first two-thirds of the process and then reduced to half in order to extract all of the potential from the skins. The new wine remained on its skins for another 20 days to develop the well-rounded sweetness that characterizes this wine.

Comments: Opaque ruby. Pungent bouquet of dark berry and cherry preserves, candied licorice and incense. Lush, creamy dark fruit flavors become spicier with air. The finish is expansive, sweet and impressively persistent, leaving spice and floral notes behind. Plenty seductive now but this has the concentration to age.
