Vinification

The crushed grapes underwent a 7-10 day cold soak prior to vinification with selected yeasts. Fermenation began at 28º-30ºC (82º-86ºF) and was later lowered to 25ºC (77ºF). Constant pumpovers and variable fermentaiton times ensure good and controlled tannin extraction. Post-fermentation maceration was conducted as determined by tastings.

Potential aging

3 – 4 years.

Comments: Inky ruby. Slightly high-toned aromas and flavors of blackberry, licorice and bitter chocolate. Dense yet lively, with good lift and juicy intensity to the dark berry flavors. The lingering finish features building tannins and notes of dark chocolate and herbs.
