120 Sauvignon Blanc is bright greenish in color with herbal aromas mingled with white flowers and fruit. The refreshing palate has nicely balanced acidity and a pleasingly persistent fruity finish, making this a light wine that is easy to enjoy.

Vinification

Grapes are harvested manually, de-stemmed and crushed; cold is applied to reduce temperature to 10°C. Under these conditions, grapes are pressed separating different juice types which will later be used in different wine types. Musts are decanted by statics for 36 to 48 hours and later fermented at temperatures between 13 and 15°C. After fermentation, lees are separated and sulfating takes place before mixture begins.

Potential aging

2-3 years.

120 Sauvignon Blanc is a fresh, fruity wine dominated by tropical and citric fruit such as grapefruit, lime and lemon peel complemented by white peach notes and distinctive variety herbs increasing complexity and lifting fruity sensations, a very interesting aftertaste amid smooth fruit and fresh acidity with a lingering and persistent finish.

Our 120 Sauvignon Blanc is crisp and refreshing. It has aromas and flavors of citrus fruits such as grapefruit and lemon peel that lend a fresh balance to the tropical fruit character and the typical herbal notes from the 2% of semillón in the blend. Vibrant, fresh, deep, and well-rounded on the palate.

Vinification

The grapes were hand picked, destemmed, crushed, quickly chilled to 10ºC (50ºF), and pressed to separate the must into different lots for use in different styles of wine. The must was statically decanted for 36–48 hours and then fermented at 13º–15ºC (55º–59ºF). Upon completion of the fermentation, the wine was separated from its lees and sulfates were added to hold it for blending.

Comments: Pale yellow. Musky aromas of pink grapefruit, lime zest, herbs and dried flowers. Juicy citrus and orchard fruit flavors are complicated by tarragon and mint notes, gaining sweetness on the back end. Finishes with good breadth, a touch of heat and echoes of lime and honeysuckle.
